Interview with Jessica Levison: Founder of Peekaboo Ice Cream!

This week, TWEE interviewed Jessica Levison of Peekaboo Ice Cream for our Woman Crush Wednesday Series highlighting woman entrepreneurs and change-makers!

As an entrepreneur, Jessica Levison answered the eternal question:
"How do I get my little ones to eat their veggies?"

Peekaboo Ice Cream provides one answer: by hiding it!

Tell us about Peekaboo Ice Cream? - What was the “aha” moment?

As any parent of little ones knows, meal times are short, chaotic and messy. Our goal is always a balanced meal but that isn’t always a reality. The CDC reports that only 1 in 10 adults and 1 in 10 children meet federal guidelines for veggie consumption – and more than half of that veggie intake comes from potatoes and tomatoes (that’s french fries and ketchup)! In a desperate attempt to get my own kids to eat veggies, I wondered – “could I make indulgent, organic ice cream that contained organic veggies – but tasted identical to my favorite brand of ice cream?”  Peekaboo Ice Cream – the first and only ice cream with hidden veggies – was born.

Why the switch from being a lawyer to being an ice cream entrepreneur?

I got fired :)
